"Spicy Spanish Tomato Sauce"
The rule is that Patatas Bravas go with mayonnaise and Salsa Brava. When we are in Spain we always buy a few bottles of Salsa Brava to take home with us, but after a while those bottles get empty, of course. No problem. With this Spanish Salsa Brava recipe you can make your own sauce in a jiffy, and better than the sauce from the supermarket.
In Spain there are at least 386 different recipes for Salsa Brava, with and without onion, with and without garlic, with and without vinegar, and most of them top secret. We did try this recipe a couple of times and we like it. Tastes good on Patatas Bravas, but it's also good for dipping!

Salsa Brava Ingredients
For this Salsa Brava recipe you will need the following ingredients:
|1 pound can|
|Onion, medium size, finely chopped;|
|Garlic, finely chopped;|
|Paprika powder (Pimenton);|
|Cayenne Pepper powder, or to taste;|
|Salt, or to taste;|
|Olive Oil, to sautee the onion.|
Salsa Brava No. 1 - Also good for dipping!
Preparation of this Spanish Salsa Brava is quite simple:
Gently sautee the onion and garlic in the olive oil, on slow fire so the onion gets tender and caramelized without burning;
Add paprika powder en cayenne pepper, allow to sautee as well;
Add tomato, allow to get to boiling point on slow fire, stir well so the tomato breaks; You could also opt to take a hand blender and turn the mix into a smooth sauce;
Stir in the vinegar, sugar and salt, mix well;
Serve in a nice bowl, or put the sauce in a bottle or dispenser;
You could turn this chunky sauce into a smooth sauce by using a blender, as you please. And you can serve the sauce hot or cold.
